I made 4 out of 7 things this week. The fish, the sandwiches, the tacos & the soup and sandwiches. Thursday was leftovers, Saturday we went out dinner & Sunday ended up being sandwiches & snacks while watching the Super Bowl.

Salmon w/lentils & spinach (I’m really going to make it this time I swear)
Chicken & Dumplings w/salad
Sage Pork Tenderloin w/cran apple relish
Sweet Pea Soup w/parmesan toast
London Broil w/cheesy quinoa broccoli bites
Stuffed Chicken (another long term carryover) w/roasted cauliflower
Week 2
Crunchy fish w/mixed frozen veggies
Chicken & rice soup (slow cooker)
Pot Roast
Pork chops w/golden applesauce
Shrimp penne positano w/endive salad
Monte Cristo sandwiches w/salad
Herb & garlic tagliata w/roasted beets
Week 3
Chicken w/mushroom sauce (slow cooker)
Garlic pork roast w/carrot, turnip & parsnips
Chicken, shrimp & broccoli stir fry
Beef & cider pot (yet another carryover)
Rib eye & cream sauce w/potato & spinach salad
Baked potato soup w/endive salad
Buffalo chicken mac & cheese w spinach salad
Plus there will be 3 take out or eat out meals which will displace meals in the menu, spaghetti or lasagna, leftover soup & grilled sandwiches & two random or leftover meals to displace 2 more menu items to round out the month.
I’m not going to fool myself this month. I will not be making all 7 meals any week this month. But this way I have a whole month of meals planned.












I used to plan my meals for a month when my children were small. Now I’m an empty-nester and I just don’t cook that much—maybe twice a week tops. That gives me leftovers for two more nights. Add a night out and a couple of Lean Cuisines, and that’s the week! I think if I started planning it out again, I wouldn’t be in such a rut. I tend to cook the same things over and over. I made a resolution to try two new recipes a month. So far, I’ve managed to make three new things in January. We’ll see how that goes!
I’m putting my menu up for this week. It’s almost all brand new things I’ve never made. Kind of nervous.
I’ve got one new recipe each week, and two of those are soup. More than that stresses me out.
I think the sage pork sounds particularly delicious!
Rib eye with cream sauce, plus potato and spinach salad sound lovely. I like hot salads.
